Shrimp Scampi Cauliflower Gnocchi



Light and tasty, this Shrimp Scampi Cauliflower Gnocchi is a great seafood dish for a quick and easy dinner during the week. The soft shrimp are cooked in an olive oil sauce with garlic, white wine, and lemon. The shrimp are then mixed with cauliflower gnocchi to make a filling meal.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 package cauliflower gnocchi
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup white wine
  • 2 tablespoons lemon juice
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley

Instructions:

Cook cauliflower gnocchi according to package instructions

Drain and set aside

In a large skillet, heat olive oil over medium heat

Add minced garlic and cook until fragrant

Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side

Deglaze the skillet with white wine, then add lemon juice and red pepper flakes

Season with salt and pepper

Add cooked cauliflower gnocchi to the skillet and toss to coat with the shrimp and sauce

Garnish with chopped parsley before serving
