Ingredients:
- 2 cups gluten-free all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups almond milk or any non-dairy milk
- 1/4 cup melted coconut oil

Instructions:
In a large mixing bowl, combine the gluten-free flour, sugar, baking powder, and salt
In a separate bowl, whisk the eggs and then add the almond milk, melted coconut oil, and vanilla extract
Mix well
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; a few lumps are okay
