Potato Leek Soup
A classic French soup that combines the earthy flavors of potatoes and leeks. Creamy, hearty, and naturally gluten-free, this soup is perfect for a cozy meal.
Ingredients:
- 3 large leeks, thinly sliced
- 4 potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh chives for garnish
Instructions:
In a large pot, melt the butter over medium heat
Add leeks, onions, and garlic
Saut until softened
Add diced potatoes and broth
Bring to a boil, then reduce heat and simmer until potatoes are tender
Using an immersion blender, blend the soup until smooth
Alternatively, transfer to a blender in batches
Stir in milk and season with salt and pepper
Simmer for an additional 10 minutes
Serve hot, garnished with fresh chives
