Quick Veggie Tofu Stir-Fry



This quick veggie tofu stir-fry is a tasty and healthy meal that you can make in no time. This meal is satisfying because it has tofu and mixed vegetables cooked in a sweet and savory sauce.

Ingredients:

  • 200g firm tofu, cubed
  • 2 cups mixed vegetables bell peppers, broccoli, carrots, snap peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions:

In a small bowl, mix soy sauce, sesame oil, maple syrup, cornstarch, garlic, and ginger to make the sauce

Heat vegetable oil in a large pan over medium-high heat

Add tofu cubes and cook until golden brown on all sides, about 5-7 minutes

Remove tofu from the pan and set aside

In the same pan, add more oil if needed, then add mixed vegetables and stir-fry for 3-4 minutes until slightly tender

Return tofu to the pan and pour the sauce over the tofu and vegetables

Cook for another 2-3 minutes until the sauce thickens and coats the tofu and vegetables evenly

Season with salt and pepper to taste

Serve hot, optionally garnished with sesame seeds or chopped green onions
