Vegan Brownies with Toasted Meringue
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup vegan butter, melted
- 1/2 cup non-dairy milk
- 1 teaspoon vanilla extract
- 1/2 cup vegan chocolate chips
- 3/4 cup aquafaba liquid from a can of chickpeas
- 1/4 teaspoon cream of tartar
- 1/2 cup powdered sugar
Instructions:
Warm the oven up to 175F 350C
Prepare a square baking pan by greasing it and putting parchment paper inside it
Mix the cocoa powder, sugar, baking powder, and salt in a large bowl with a whisk
Melt the vegan butter and add it to the dry ingredients along with the nondairy milk and vanilla extract
Mix everything together well
Add vegan chocolate chips and mix well
As soon as the pan is ready, pour the batter into it and use a spatula to smooth the top
If you stick a toothpick into the middle and it comes out with a few moist crumbs, the cake is done
Get the meringue ready while the brownies are baking
Mix aquafaba and cream of tartar in a big bowl until soft peaks form
You can use a hand mixer or a stand mixer for this
As you beat the mixture, slowly add the powdered sugar until stiff peaks form and the color is glossy
Take the brownies out of the oven and let them cool down a bit
Use a spoon or spatula to make peaks in the meringue that you spread on top of the brownies
Lightly toast the meringue with a kitchen torch until it turns golden brown
Let the brownies cool all the way down before cutting them up and serving them
