Avocado Stuffed Hearts of Palm Crabless Salad



This Keto-friendly salad combines creamy avocados with crunchy hearts of palm for a satisfying and refreshing dish. Perfect for lunch or a light dinner, it's packed with flavor and nutrients.

Ingredients:

  • 2 ripe avocados
  • 1 can hearts of palm, drained and sliced
  • 1 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes for added spice

Instructions:

Take the pits out of the avocados and cut them in half

Take some of the flesh out of each half of the avocado to make a bigger space for the stuffing

Hearts of palm, cucumber, red bell pepper, red onion, cilantro, lime juice, olive oil, minced garlic, salt, and pepper should all be mixed together in a bowl

Throw it all together well

Carefully fill each half of the avocado with the hearts of palm mixture, making sure there is an equal amount in each half

If you want, you can add more cilantro and crushed red pepper flakes as a garnish

Serve right away and enjoy!
